Timur (Zanthoxylum armatum) is the Himalayan cousin of Sichuan pepper, bright and citrusy, with a gentle tingling, numbing buzz on the tongue. Wild-harvested from the foothills, it is wonderful in chutneys, rubs and pickles. How to use: Crush lightly to release the aroma and add to chutneys, marinades and the famous timur-ko-chhop dip.
